Gettin Skinny


Swimuit season is coming. Hooray!!!! I will actually look like a normal person this year, instead of a beached whale! But first, I have to get skinny, cuz all the crapola that I ate on my trip is now showing on my love handles. We seriously ate McDonalds 4 times, not to mention pizza, cinnamon rolls, cheesecake, chips, pretzels, candy, soda, ice cream, etc. Gross. So Braden has put his foot down and is making everyone eat better. Our kids have eaten nothing but fruit today, and they are surprisingly happy. I had to search around for recipes that do not contain a half pound of butter, and used more veggies, so I picked up the March issue of Martha Stewart Living. I love those magazines just for the visuals, but there were a lot of great recipes in there that I'm gonna try out.

Tonight is Grilled Beef Kebobs, Grilled Eggplant with Feta, Rice Stuffed Bell Peppers, and Raspberry Custard Pie. Go here for the whole menu, and cook along with me. You are going to need to go to Sprouts, and probably spend a while there trying to find everything, but we're gonna try and use the extra stuff in future meals. I'm skipping the cucumber soup, cuz I HATE cucumbers, but we're trying everything else, so we'll see how it goes.

***UPDATE: I made the meal, and I'm not super thrilled about it. The grilled baguette was awesome (brush with olive oil, and add lots o salt & pepper & dried thyme to the top, and grill face down) and I actually really liked the feta with reduced balsamic vinegar (1 cup balsamic, boil for 8 min til half in volume and then add one Tbs of olive oil with salt, pepper, & thyme). Braden wasn't the biggest fan. The kebobs were kind of blah, and I've decided I don't like eggplant. Also, if you are going to make the rice dish REMEMBER to seed the serrano chile before adding it in. I forgot and it blazingly hot. Other than that it was interesting, but I probably won't make it again. Well, they can't all be winners.
